Pablo Albuerne (Oviedo, 1976), better known as Gipsy Chef, is regarded as a free spirit who takes the kitchen wherever he goes, blending cultures, ingredients and styles with a unique freshness. After completing his training and working in Michelin star restaurants and travelling the world in search of inspiration, he decided to break away from the norm and cook without any constraints. A communicator and chef in equal parts, he has owned two restaurants, published two books and regularly collaborates with Televisión Española (TVE), Televisión de Cataluña (TV3), La Sexta, Radio Televisión Española (RTVE) and Movistar+, preparing fun, delicious and easy recipes.

OLIVE OIL

I think it would be impossible to live without this flavour in all my meals. Without a doubt, it’s a must-have for me. It isn’t just about flavour, it’s also about health. Few things are as healthy as olive oil.

  

ORGANIC SALT

This ingredient can be found in all homes, but it isn’t given the importance it deserves. It can be found in practically all our dishes, but how many people take note of the type of salt they buy? Why make do with any salt when you can opt for organic and high quality salt, at a low price? As far as I'm concerned, organic and high quality salt is also a must-have.

  

DARK CHOCOLATE

Even though many people think of it or relate it directly to sweet dishes, for me it’s a real obsession and I use it in lots of recipes at home. Interestingly, sweet dishes aren’t my favourite. I use chocolate, for example, as a quick snack with olive oil, salt and a piece of bread, or grated on a freshly roasted chicken. Chocolate is a great ally that can amaze you in some incredible ways.

  

SEASONAL FRUIT AND VEGETABLES

All homes should always have fruit and vegetables, but not just any type, seasonal fruit and vegetables. Eat nice tomatoes in summer; enjoy cabbage, cauliflower and broccoli in winter; cherries, strawberries and avocados in spring... Don’t forget that the season has a meaning.

  

FISH

I like meat but, for me, nothing compares to fish. Any fish, especially if it’s in season, is good for me. The important thing is to know the best way of cooking it. But all, absolutely all, fish is good.

Muy buena selección. El aceite de oliva virgen extra también es el primero de mi lista: es la base de la dieta mediterránea. Cambiaría el chocolate por frutos secos y el pescado por la carne.
