Stuffed shiitake mushrooms

 For 4 servings:

 •  8 large shiitake mushrooms

•  Spicy sobrasada paste

•  1 tender onion

•  Crunchy fried onion

•  Black pepper

•  Salt

•  Extra virgin olive oil

PREPARATION

1. Remove the stalks from the mushrooms and keep them to one side.

2. Fry the tender onion in a little olive oil.

3. Melt the sobrasada paste in the frying pan and blend with the onion.

4. Set aside to cool down.

5. Put the mushrooms on a baking tray, season to taste and fill with the spicy sobrasada paste and onion.

6. Preheat the oven to 190º and bake until brown.

7. Serve on a plate and sprinkle some crunchy onion over as a topping.
