Mango ceviche

For 4 servings:

•  2 large mangoes

•  2 limes

•  1 lemon

•  1 orange

•  1 red onion

•  1 stick of celery

•  1 handful of coriander

•  4 pickled gherkins

•  Salt

•  Extra virgin olive oil

PREPARATION

 

PREPARING THE TIGERMILK

1. Juice the lemon, lime and orange by squeezing them in your hands.

2. Cut the celery and coriander into small pieces.

3. Thinly slice the red onion.

4. Mix it all together in a bowl.

 

TO COMPLETE THE RECIPE

1. Peel and dice the mangoes.

2. Add them to the tiger milk.

3. Add salt to taste and a splash of olive oil.

4. Allow to marinade for some time before serving. (30 minutes minimum, 6 hours maximum).
