Rosé cava: sweet, semi-dry and semi-sweet

We already learned about the world of cava in a recent article, https://labodega.consum.es/tipos-cava, but today we are going to take a closer look at Rosé Cava and its varieties, which has an increasing number of devotees.
Its characteristic feature is its pink colour, which comes from macerating the grape skins in contact with the must before fermentation. If we do not do this, we obtain still or sparkling white wine, although red grapes produce what is known as “blanc de noirs”, such as the case of Champagne. Therefore, the colour will depend on the time they are in contact with each other and the grape variety, ranging from a pale pink to a much deeper one. It can also be obtained by mixing white and red grapes, or using just red grapes. Let us take a look at the grape varieties in the Cava D.O.:
White: Macabeo, Xarel.lo, Parellada, Subirat Parent (or Malvasía) and Chardonnay.
Red: Grenache noir, Trepat, Pinot Noir and Monastrell.
Which grape varieties are most widely used depends on the production region.
As we have already mentioned, the only difference from white Cava is the colour. Apart from that, production is exactly the same as other cava, following the traditional method authorised in this Designation of Origin.
Sparkling rosé wines have other differences too. We are now going to take a look at the most significant ones:
- Flavour: they are usually fruity, with hints of red berries such as strawberries, raspberries or cherries, or even citrus fruit. Some of them will be sweeter, and others more tart, depending on the amount of residual sugar they contain. Remember that this is indicated on the label under the terms: brut nature, extra brut, brut, extra dry, dry, semi-dry and sweet.
- Tastes can range from fresh with hints of wild berries, flowers and herbs, or more evolved nuances reminiscent of confectionery, wood or nuts and spices. That will depend on how long they are aged.
- They can be full-bodied powerful wines, or much lighter and good-natured.
