Cava and sparkling wine
So why are they called sparkling?
These wines obviously contain gas (more than semi-sparkling wines), but one of their particularities is that the carbonic gas they contain is 100% natural, i.e. it is exclusively produced by the yeast.
Sparkling wines have always been closely linked to toasting, and although they are perfect for this, they can also be an excellent idea at the start of a meal, with the hors d'oeuvre or with typical main courses.
