Walnuts are the fruit of the walnut tree, belonging to the Juglandaceae family. It is a fruit with a woody shell which, when split, presents a dry light brown coloured pulp inside. The flavour of this dried fruit is unique since it is sweet with a bitter aftertaste.

Nowadays there are more than fifteen varieties of this family, but the most popular on the market are: Juglans Regia, European walnut, Black walnut and Californian walnut.
This fruit originates from Persia, although today we can find crops of this fruit in various countries around the world, including the United States, for example. The main walnut-producing countries supply the market all year round. In Spain, there is a low production, it centres on the months of September and October and Christmas consumption, which means all of the walnuts are sold soon after harvesting.
Walnut are normally eaten raw as a snack or dessert. This fruit is also used as an ingredient in many dishes, sauces and ice creams, and sometimes as a garnish.
Walnuts are a high energy dried fruit with a high percentage of fat in their composition, which correspond to essential fatty acids. Walnuts are a source of minerals such as fibre, proteins, iron, zinc, potassium and magnesium. In addition, this dried fruit is rich in vitamins from group B and folates.
