Lettuce is a plant belonging to the Compositae family. This family receives its name because its flowers are formed by the fusion of thousands of tiny flowers. Only the leaves are eaten from lettuce, which are large, usually a light green colour and with a crunchy texture, although that will depend on the variety consumed.
The origin of lettuce is unknown, but it is currently grown in temperate regions around the world. This leafy vegetable is also germinated in greenhouses, thanks to which, we can find the in the supermarket all year round.

It is a leafy vegetable with a high water content and very low in calories given its low carbohydrate, protein and fat content.
This vegetable contains a high level of group C vitamins, folates and flavonoids such as quercetin.
The mineral composition of lettuce is fairly low, but among them we can highlight small amounts of phosphorous, iron, calcium and potassium, the latter being most notable.
