Lemon
The lemon is the berry fruit of the lemon tree, an evergreen tree of the Rutaceae family. The lemon is oblong in shape and covered by a yellow, thick and aromatic skin. Inside we find a very juicy pulp in the form of segments and with a very acid taste.
According to their size, lemons can be classified as small, medium and large and, according to their color, green and yellow. Although, in Spain, the most consumed is the large yellow lemon.

As with many fruits, lemons are a strong source of vitamins from group C, making them an excellent antioxidant. Moreover, their pulp contains organic acids such as citric acid, responsible for their acidic flavour. Lemons also have small quantities of fibre, flavonoids and phytonutrients.
