The kiwi is the fruit that is obtained from the actinidia plant, of the family of the actinidiáceas. It is an ovoid-shaped berry fruit covered with a thin brown skin, slightly hairy, which includes a very juicy and acid green pulp (although in some varieties it can be yellow).

Today we find different varieties on the market: the kaquiara II, the Actinidia and the hayward. In Spain, the most commercialized variety is the Hayward.

As with many other fruits, kiwis have a high water content. In terms of nutritional composition, it is worth noting that this fruit is a source of fibre and contains a very high concentration of vitamins from group C.

Kiwi contains actinidine, a proteolytic enzyme which helps to digest proteins more effectively. In terms of the composition of minerals, it stands out for its high quantities of potassium and, to a lesser extent, phosphorous, calcium and magnesium.
