Cucumber
Cucumbers are a berry fruit (with pulp and seeds inside), coming from a herbaceous plant belonging to the Cucurbitaceae family with the same name as its fruit. The size and colour of cucumber varies although, usually, it has a cylindrical and elongated shape, it is green in colour and its skin has a coarse texture.
Among the varieties of cucumber, we can find short cucumber or gherkins (Spanish type), medium cucumber or long cucumber (French type) and long cucumber (Dutch type).

Cucumbers are very low in calories, with a very high water content and very few carbohydrates.
In terms of their vitamin content, we can find quite a high level of vitamin C, which helps to combat ageing, although they also contain smaller quantities of vitamins from group B such as thiamine, niacin or folates.
In cucumber skin, we can find a small amount of beta-carotene, which is removed when the vegetable is peeled.
The quantity of minerals is significant, although we can find a large quantity of phosphorous, which helps the correct development of muscles and the nervous system.
