Chicory is a vegetable belonging to the Asteraceae or Compositae family, which include more than 20,000 species, of which very few are cultivated.
Asteraceae are characterised for the fact that their flowers are made up of the fusion of thousands of tiny flowers. This family includes vegetables from different species which are grouped as follows: flowering Asteraceae, stem Asteraceae and leaf Asteraceae.
