Whether green or white, asparagus are young and tender stalks that grow on the asparagus plant from the Liliaceae family. It is a small and elongated vegetable, characterised by its intense flavour, especially in the case of ‘triguero’ asparagus, in other words, those that grow in the wild.
Moreover, its colour depends on the way it is cultivated: if it is covered with soil and does not come into contact with sunlight, it will remain white and tender. However, if left to grow on the surface, they take on a green colour.

Asparagus, like many other vegetables, does not contain fat, but it does contain a large amount of water and, despite its low energy content, it contains a large quantity of nutrients, especially in green or ‘trigueros’ asparagus.
It is also a food that contains a large quantity of inulin and fibre, which help to combat constipation and regulate intestinal transit.
On the other hand, asparagus are rich in flavonoids and vitamins from groups A, C and E, which performs an antioxidant function and helps to combat the signs of ageing.
