This fish is an oily fish belonging to the Engraulidae family. It is a very small fish characterised by its very elongated body, ever so slightly laterally compressed. Their skin is a brilliant silver colour and is covered by tiny scales that are very easily removed.
It has a pointed snout, large bulging eyes, a fin that protrudes from the middle of the back, an anal fin from the middle of the belly, and a divided tail.

Being an oily fish, it has a higher amount of fat than other species and is high in omega-3. The anchovy also represents a source of proteins of high biological value and, in terms of its mineral content, provides useful quantities of selenium, phosphorus and potassium.
