Skate
Skate is a white fish belonging to the Rajidae family, and related to sharks. They are characterised by their totally flattened, cartilaginous body, with large pectoral wings (which give it a diamond shape) and an elongated tail that has a dorsal fin on either side.
The upper face of this animal is dark grey (although in some species it can be lighter in colour) and it has a mouth full of small teeth. There are many varieties of this species distributed throughout the world, although the thornback skate is the best known and most widely sold.

Skate is a white fish with a very low fat level. It is a source of protein and contains fatty acids such as omega-3. Regarding its mineral composition, skate does contain selenium and phosphorus, but in doses that are considerably lower than those of other fish.
As for vitamins, skate provides significant amounts of B vitamins, such as B3, B6 and B12, the latter in greater amounts.
